Green Salad with Lemon Myrtle Dressing

Dressing Ingredients:

2 egg yolks

1 tbsp mustard

splash white wine vinegar

2 tbsp lemon myrtle syrup (refer to lemon myrtle syrup recipe)

1 drop only lemon myrtle oil

Method:

  1. place all dressing ingredients together in the blender
  2. With the motor on - drizzle 300mls of oil until mixture emulsifies
  3. Add lemon myrtle syrup to taste and one drop of lemon myrtle oil
  4. bottle and refrigerate

Chef's note: IMPORTANT! Lemon myrtle oil is extremely concentrated and can burn. Only ever use ONE DROP using a glass eyedropper.
