Dorrigo Beer Muffins
Ingredients:
3 cups self raising flour
1 level tsp Dorrigo pepper, ground
1 level tsp salt
1 level tsp brown sugar
1x 350ml small bottle of beer (can substitute ginger beer)
1/2 cup grated tasty cheese
Method:
- Preheat oven to 180C
- In a large bowl combine all the dry ingredients
- Make a well in the centre and pour in the bottle of beer, stirring gently until just combined
- Spoon into muffin pan, filling to 2/3 level. Sprinkle each muffin with a little grated cheese
- Bake for 14-18 minutes until lightly browned and springy to the touch
Serve warm with butter and cheese
